Sweet Rainbow Slaw

Based on my Grandmother Mildred Jones' original Sweet Freezer Slaw.
Makes a little over 8 half cup servings. Is great on pork sandwiches....tenderloins and who knows what else? This also freezes well as it is based on a freezer slaw.

Ingredients
8 servings
Brine in 2 cups water and 2 Tablespoons salt for 1 hour
16 ozCole Slaw
Tri-Color, Bag, Fresh
¼ cupgreen peppers
diced
¼ cupred bell pepper
diced
¼ cupchopped Pimentos
Make Syrup
Add in After draining brine off (do not rinse)
Instructions
Step 1
Brine (Soak) the first 4 ingredients for 1 hour in 2 cups water and 2 tablespoons Salt.
Step 2
Bring the next 4 ingredients to a boil stirring continuously. Once a boil is reached, take off burner to cool down.
Step 3
When hour of brining is up, drain in colander and press out all the water you can. DO NOT RINSE!
Step 4
Add the celery and shallot (or onion) to slaw mixture in Bowl.
Step 5
Check that syrup is cooled down (If not put in fridge for 15-20 min.)
Step 6
Pour onto slaw mixture and thoroughly mix.
Step 7
Cover bowl and put in fridge, it is much better the next day.
Step 8
Stir again before enjoying.
