Instructions

Step 1
Cook the quinoa as per packet directions. Set aside to cool.
Step 2
Transfer the Plant Boss crumbles to a medium bowl. Add 2 cups water and let soak for 3 minutes. Meanwhile, heat the oil in a large nonstick skillet over medium-high heat. Add the crumbles and cook for 15 to 20 minutes, or until all the water is absorbed, stirring occasionally.
Step 3
In a medium bowl, mix the hummus, pickle juice, paprika, and 2 tablespoons water. Press or grate the garlic into the bowl. Add maple syrup to taste. Adjust water to the desired consistency.
Step 4
Optional: Massage the kale with a drizzle of olive oil.
Step 5
Optional - Make 4 (32-ounce) jars: Divide the dressing between the 4 jars (about 2/3 cups in each). Add one fourth of the Plant Boss crumbles (about 2/3 cup + 2 tbsp), ½ cup red onion, ¾ cup tomatoes, 1 cup quinoa, 2 cups kale, ¼ cup pumpkin seeds, and 1 tbsp hemp seeds to each jar. Refrigerate for up to 4 days. Invert over a medium bowl and mix for serving.
Step 6
Alternatively, mix all the salad ingredients in a large bowl and serve.
