tail-end portion, cut into thick slices

1 ½ Tbsppreserved soybeans
tau cheong, minced
50gminced pork
2bird’s eye chillies

300mlchicken stock

Instructions
Step 1
Lightly season the fish slices with salt and pepper. Sprinkle lightly with cornflour, coating evenly.

Step 2
Heat oil until hot. Deep-fry the fish slices until golden brown and crisp. Remove and drain. Set aside.

Heat a little oil in a wok. Fry the minced garlic over medium heat until golden and crispy. Dish out and set aside.
Step 4
In a clean wok, add 1 tbsp cooking oil and sesame oil. Fry the minced ginger until fragrant. Add preserved soybeans and stir-fry until aromatic.

Step 5
Add the minced pork and fry until cooked and lightly browned.
Step 6
Add bird’s eye chillies. Pour in the chicken stock, followed by oyster sauce, light soy sauce, thick soy sauce, sugar, and Shao Hsing wine. Stir well.
Step 7
Add the pre-fried fish slices into the wok. Cover and braise over medium-low heat for 8–10 minutes, or until the gravy reduces and coats the fish.

Dish out and top with crispy garlic. Serve hot with steamed rice.
