The Dressing:
¼ cuplow-fat plain Greek yogurt
3 tablespoonsextra-virgin olive oil
2 tablespoonsfresh lemon juice
2 teaspoonsdijon mustard
1 ½ teaspoonsanchovy paste
1garlic clove

The Chicken:
Instructions
Step 1
Combine all ingredients for the dressing, and separate into two containers in half. Reserve one half for topping later.
Step 2
Coat each chicken breast in a thin layer of dressing. Crush or process the croutons, and bread the chicken breasts with it.
Step 3
Either pan-fry or bake (or air fry) the chicken until cooked through. Optionally serve with pasta and vegetables, and reserved dressing!
