Step 1
Part 1: Make the poolish. DO NOT SKIP THIS STEP! This is what makes the Pizza so good! Dissolve the yeast and honey into the water. Add flour and mix. Cover and let rest a room temperature for 1 hour. After 1 hour, place the mixture (poolish) in the fridge for 16-24 hours. Part 2: Mix the dough. Dump the poolish into a mixing bowl. Add the water and salt. Mix until it's mostly combined. Add the flour gradually and Mix. Mix the dough for 15 minutes until it is smoothe and elastic. Divide the dough into 4 balls and let rise at room temperature for 1-2 hours or put them in the fridge for up to 4 days. Yes, they will rise in the fridge! Preheat your oven and pizza stone to 550° for 30-60 minutes. Roll out your pizza crusts. Add sauce, cheese and any other toppings you like and bake for about 6 minutes.
