Instructions

Poolish

Step 1
Combine water, honey and yeast in a bowl and mix until homogenous.

Add the flour and combine it until all flour is incorporated.

Leave in the counter for 1 hour at room temperature, after that place the polish in the fridge for 16-24 hours.

Pizza Dough

Step 4
Add the poolish (1 hour room temperature) and the flour to a bowl.

In another jar add the water and the salt and mix it together

Integrate the flour in the poolish and little by little add the salty water until all the water gets integrated into the mixture. About 10 to 15 minutes.

After that, place the dough on a table and work it with two hands until no lumps of flour remain. Slap and fold the dough into a ball, apply a little olive oil on the surface and let it rest uncovered for 15 minutes

After the rest, apply a little bit of olive oil in your hands and shape the dough into a ball. Apply a little bit of olive oil on the surface and let the dough rest for 1 hour covered with a damp cloth at room temperature.

Place a pizza steel or stone in your oven and pre heat it at least 40 minutes before making the pizzas.

Divide the dough into 250-280g balls, depending on the oven size. Close the balls paying up attention to keep the nice smooth surface. Cover the dough and let it rest for an additional 1 hour.

Gently remove the dough with a spatula using a little bit of flour. Place the dough upside down into a bowl with flour.
Step 12
Press the dough with the finger pushing the air into the direction of the crust. Pinch the crust to seal the air on the border. Pull and press the dough until you get the desired size. Remove the excess flour and build up your pizza.(Home oven)
Step 13
Pre-cook the pizza only with tomato or white sauce until the dough has a light golden color.
Step 14
Remove the pizza from the oven, brush a little bit of olive oil on top and finish assembling your pizza.
Step 15
Place the pizza in the oven until the cheese is bubbling.
