Instructions

Step 1
Prepare the Salsa. Mix the avocado, tomatoes, shallot, garlic, lime juice, and salt in a bowl. Set aside.

Cool tortillas. Cook the laBuela tortillas in a hot skillet until they bubble and turn slightly golden. Keep them warm. 30 seconds on each side

Whisk the eggs with smoked paprika and ¼ tsp salt.

Step 4
In a nonstick pan over medium-high heat, cook the sausage until browned (4–5 minutes). Move the sausage to a plate, leaving the fat in the pan.

Lower the heat. Add the eggs to the pan and scramble until cooked. Move them to a plate.
Step 6
Place a few spoons salsa on each tortilla. Add a 1/8 of the sausage, a 1/8 of the eggs, and mozzarella (if using). Roll the tortillas tightly.
Step 7
Lightly oil the pan over medium heat. Place burritos seam-side down and cook until golden brown (about 1-2 minutes). Flip and cook the other side until crispy. You can also use a sandwicher or panini maker.
