Instructions

Step 1
Scrape all scales off each side with a normal scrub pad (doesn't have to be perfect)
Step 2
In a bucket or large bowl, mix together water, brown sugar, salt, soy sauce, lemon juice and let soak for 12-24 hours.
Step 3
Take fish out of brine and let drip dry
Step 4
Place 1/2 TBSP of butter in each rib cavity and dust with salt, pepper, and rosemary
Step 5
Smoke on 225 for 1.5 hours or until skin leathers up and lightly peels from the meat.
Step 6
Let rest for 5-15 minutes
