Ingredients

¼ teaspooncayenne pepper
1 teaspoonsmoked paprika
1 teaspoondried oregano
1 teaspoondried thyme
1 teaspoondried rosemary
1 teaspoonkosher salt
½ teaspoonfreshly ground black pepper
2 tablespoonsextra-virgin olive oil
12 ouncesandouille sausage
thinly sliced
1 cupyellow onion
finely diced
½ cupcelery
finely diced
1 cupgreen bell pepper
small-diced
2garlic cloves
minced
½ cupdry white wine
1 cupmedium-grain white rice
rinsed and drained
1 x 14.5 ouncecan diced fire-roasted tomatoes
¾ cuplow-sodium chicken broth
1bay leaf
3green onions
thinly sliced
1 tablespoonfreshly squeezed lemon juice
Fresh parsley
optional for garnish
Instructions
Step 1
In a small bowl, combine cayenne, smoked paprika, oregano, thyme, rosemary, salt, and black pepper. Set aside.
Step 2
Heat oil in a large deep skillet over medium-high heat. Add sausage and spread into a single layer. Cook undisturbed until browned on one side, about 2 minutes. Toss and cook for an additional 2 minutes to further brown the sausage. Use a slotted spoon to remove sausage to a plate. Set aside.
Step 3
Reduce heat to medium and add onion, celery, bell pepper, and garlic to the skillet. Cook, stirring, until slightly softened, about 4 minutes. Add the spice mixture and cook, stirring and toasting the spices until fragrant, about 2 minutes.
Step 4
Pour wine into the skillet and stir, scraping up any browned bits on the bottom. Simmer until reduced by half, about 2 minutes.
Step 5
Add the rice, tomatoes, and broth; stir to combine. Add the bay leaf and bring to a simmer. Reduce heat to medium-low, nestle the sausage back into the skillet, cover, and cook at a light simmer for 20 minutes.
Step 6
Remove skillet from heat and keep covered for 10 minutes to let rice steam until tender.
Step 7
Fluff rice with a fork; stir in green onions and lemon juice. Divide among bowls and garnish with chopped parsley, if desired.
