Instructions
Step 1
Dry Ingredients
• 3 cups all-purpose flour
• ¾ cup maple sugar
• 2½ tsp baking powder
• 1 tsp salt
• 1–3 tsp pumpkin pie spice
Whisk together thoroughly.
Step 2
Wet Ingredients
• 1¼ cups milk
• 2 eggs
• ¼ cup sour cream
• ½ cup butter, softened
Mix wet ingredients, then combine with dry.
Batter should be very thick and scoopable — not pourable.
Step 3
Can substitute sour cream for buttermilk or Mix: • ¼ cup milk • 2 tsp vinegar or lemon juice • 1 tbsp melted butter or oil Let sit 5 minutes, then use.
This keeps the crumb tender instead of dry.
Step 4
Bake
• Grease bread pan
• Add batter
• Bake at 350°F for 50 minutes
• Check center with a knife or skewer
Step 5
Topping
• 2–3 tbsp butter, melted
• 1–2 tbsp maple syrup, brushed on while hot
• Sprinkle with cinnamon + a little maple sugar (optional but excellent)
