Instructions
Step 1
Chop the sweet potatoes into small cubes (not tiny).
Toss with olive oil and salt to cover and spread in one layer in a baking pan.
Bake for about 15-20 minutes until almost cooked.
Step 2
Place the fish fillets in the baking pan, on top of the sweet potatoes.
Step 3
Combine about 3 tbsp olive oil, salt, some chopped parsley and seasonings in a bowl, adding some water to make enough marinade to cover the fish fillets in the pan.
Step 4
Once the fish fillets are covered with marinade, bake uncovered for about 25-30 minutes until the fish is cooked.
