Step 1
Preheat oven to 425°F. Grease a jumbo 6-slot muffin tin.
Step 2
Combine mashed bananas, date paste, almond butter, vanilla, and eggs in a bowl.
Step 3
Add einkorn flour, collagen, flax, baking powder, coconut, and salt. Mix until just combined; do not overwork.
Step 4
Let the batter sit for 10 minutes for einkorn hydration.
Step 5
Gently stir in blueberries.
Step 6
Fill tins to the brim. Bake at 425°F for 7 minutes, then drop temp to 350°F for 25-30 minutes.
