put 1 tbs oil of choice or butter in bottom of pan. place roast in and bake lid off 45 min to 1 hr when brown add 1 more tbs oil or butter to bottom of pan and flip roast and brown other side about 20 min or so then

now pull the pan add all other ingredients the onion, garlic powder, onion powder are optional and small amounts only... salt, pepper, medium amount based on size, 2-3 cups of water with bullion or beef broth, 1/4-1/2 cup red or white wine can use vinegar add tbs maple syrup if u use red wine vinegar. add garlic cove cook about 40 minutes or so depending on thickness but if you want

if you want add carrots and potatoes about an 1 hour before your done check middle temp 135 rare 145 medium 155 well done Chuck is usually most tender under 150
