Instructions

Step 1
Stand mixer or by hand

Add flour and salt and mix for 10 min or just leave on the counter for 15
All purpose FlourAll purpose Flour450 gr

Step 3
Perform 2-3 sets of stretch and folds combining little by little the chocolate Leave on the counter for 1h30 approximately until almost double in size (total time from start should be around 2h)

With flour on the surface, it will be sticky!shape the dough folder style and try to have tension on top with push and pulls. Careful the chocolate will rip the dough
Step 5
Put in banetton and leave on the counter or in the fridge at least 30 min
Step 6
Bake in dutch oven at 240c with lid on 30min and at 220c lid off 10-20min Internal temp should be 88c-98c
