Instructions

In the Instapot on Rice Setting

Step 1
1 1/2 cups rice 1 cup liquid from canned pineapple (plus a handful of pineapple pieces) 1/2 - 2/3 cup bone broth Mix and start

Frying Pan

Step 2
Saute onion, bell pepper, and garlic in oiled frying pan
Step 3
Add cubed chicken. While it cooks add the chili powder
Step 4
Add precooked bacon (cut into rough 1/2 inch rectangles) and coconut aminos (or soy sauce). Drop to low temperature
Step 5
Add remaining pineapple and juice. Mix it up

Mix Rice and Chicken

Step 6
Throw in fresh chopped cilantro leaves and stir up. Serve with a vegetable on the side
