This condiment is superbly useful, not to mention very tasty. A match made in heaven for Sesame-Crusted Tofu Summer Rolls (see here), it’s also an excellent dip for vegetables, a sauce for Southern-Style Sheet Pan BBQ Tofu With Sweet Corn & Green Beans (see here), and a great base for an incredible peanut butter sandwich—try it on good whole-grain or sourdough bread with some sliced scallions and cilantro or Quick Pickled Veggies (see here).

Step 1
Put all the ingredients in a small bowl and stir, gently at first, until the mixture begins to emulsify. Then stir more vigorously until everything is thoroughly combined. This sauce is great right away, but it gets better after an hour or so, once the flavors have had time to marry. Keep tightly covered in the fridge for up to 2 weeks.
