250gself raising flour
1 tspbaking powder
½ tspmustard powder
50gbutter
110gLancashire cheese
grated
1egg
125mlmilk

Instructions
Step 1
Preheat oven to 180 fan
Step 2
Sift the flour, baking powder, mustard powder into a bowl.
Step 3
Add the butter and then rub in until the mixture resembles fine breadcrumbs
Step 4
Stir in 75g of the cheese
Step 5
Lightly beat the egg into the milk, then pour into the flour mixture
Step 6
Use a round bladed knife to bind the ingredients together then knead the mixture very lightly to give it a smooth surface (kneading it on a lightly floured surface will stop it from sticking)
Step 7
Roll out the dough to 2cm thick and it out rounds using a 6.5cm round cutter and place them on a baking sheet. Sprinkle the tops with the remaining grated cheese
Step 8
Bake the scones towards the top of the oven for 12-15 minutes until they have risen and are lightly golden in colour
Step 9
Remove from the oven and transfer to a wire rack. Serve hot or cold
