Instructions
Step 1
Preheat oven to 200 degrees and chop potatoes into sma cubes.
Step 2
Mix 2 parts olive oil, 2 parts water, 1 part lemon juice, and some oregano. Add to baking dish and add potatoes. Cook for 30 minutes.
Step 3
Mix red onion, feta, cucumber, and tomatoes in a bowl for the salad.
Step 4
Cut cucumber in half lengthways then scoop out seeds. Grate cucumber and add it to Greek yoghurt. Add lemon juice, garlic, salt, oregano and mix.
Step 5
Once potatoes are cooked add to a bowl, then add salad and tzatziki.
