Crockpot Cheesy Chicken and Broccoli Pasta

This hearty crockpot dish combines chicken, creamy cheese, and broccoli with pasta for a comfort meal.

Instructions

Step 1
Spray crockpot. Add chicken, broth, cream of chicken soup, garlic powder, onion powder, salt and pepper.
Step 2
Cover and cook on LOW 4-5 hours or HIGH 2.5-3 hours, until chicken is tender.
Step 3
Shred chicken in crock pot with two forks.
Step 4
Add cream cheese, milk, 2 cups cheddar, and Parmesan. Stir, cover and cook on HIGH for 15 minutes until cheese melts into smooth sauce.
Step 5
While the cheese melts, cook pasta in salted boiling water until Al dente.
Step 6
For the last 2-3 minutes, add broccoli to the pot to blanch it, then drain everything well.
Step 7
Stir in drained pasta and broccoli into cheesy chicken mixture until coated.
Step 8
If too thick, add a splash of warm milk or broth.
Step 9
Sprinkle remaining 1/2 cup cheddar on top, cover, and let sit on WARM or LOW 5-10 minutes, until meaty gooey.
Step 10
Taste and adjust salt and pepper.
