Step 1
1. Preheat oven to 200°C (180°C fan).

2. Toss chicken, red pepper, courgette, and green beans with olive oil, herbs, salt, and pepper on a baking tray.

3. Roast for 25-30 minutes until chicken is cooked and veggies are tender.

4. Meanwhile, soak bulgur wheat in boiling water or stock for 10-15 minutes until tender.

5. Fluff bulgur with a fork and serve alongside chicken and veggies.
