16 ozblack beans

Mashed Potato Topping
Instructions
Meat filling
Step 1
Preheat oven to 400 degrees. For prep, finely chop the onion, carrots, and bell pepper (I recommend finely blending in a food processor).
Step 2
Add chopped veggies to a hot pan with olive oil. Cook until the liquid is gone. Clear a little spot of the pan to add a dash more of olive oil. Crush the garlic into that spot. Cook until fragrant (about 45 seconds) & stir into the rest of the mixture.
Step 3
Add the beef, mix well, & then cook until meat is fully browned. Then, clear another little spot & add tomato paste. Cook the paste 2-3 minutes & then incorporate into the meat mixture. Cook until all liquid is gone.
Step 4
Add the white wine, balsamic vinegar, Worcestershire sauce, and smoked paprika. Stir well & reduce by 75%. Stir frequently.
Step 5
Add chicken broth and beans. Cook until desired consistency. I recommend to reduce the liquid by about 50%. Make sure some liquid remains so it doesn't dry out in the oven. Salt and pepper to taste.
Mashed Potatoes
Step 6
Scrub potatoes to ensure they are clean and free of dirt. If you don't like potato skin, feel free to peal. Chop into 1 inch pieces and boil in well salted water for about 20 minutes, or until a knife can pierce entire potato easily.
Step 7
Move potatoes to a bowl and cover with a towel for 10 minutes.
Step 8
Add milk, butter, egg yolks, salt, pepper, garlic powder, and onion powder to potatoes. Mash & mix well. Then, add in shredded parmesan and fold together. Ensure consistency is what you desire (I recommend fairly whippy). Adjust as necessary.
Make the pie & bake!
Step 9
Add dried thyme, rosemary, and peas to the meat mixture. Ensure it is well incorporated.
Step 10
Top with mashed potatoes. Easiest way is to dollop mashed potato onto the mixture all over the pan and then use a flat spatula or spoon to smooth it out over the top to fully cover. Use a fork to rough up slightly.
Step 11
Top with more parmesan & bake for 30 minute at 400 degrees, or until top is starting to brown.
