Balanced Ricotta Gnocchi (Lightened Version)

Instructions

Step 1
Drain ricotta properly by placing it in a fine sieve or very well-drained cheesecloth for 30 minutes. The drier the ricotta, the less flour you'll need.
Step 2
Whisk egg lightly in a bowl.
Step 3
Fold in ricotta, then add salt.
Step 4
Sprinkle flour over the mixture and gently mix until just combined. Do not overmix. No added oil or butter in dough.
Step 5
Roll the dough into ropes and cut into 1-inch pieces. Optional: press lightly with a fork.
Step 6
Drop gnocchi into boiling water.
Step 7
When they float (2-3 minutes), remove immediately. Do not overcook.
