One Pot Chicken Alfredo

Ingredients

0.5 bunchparsley
300 gmchicken thighs
50 gmparmesan
grated
2chicken stock cubes
500mlwater
boiling
2 tspolive oil
1 cupPenne pasta
60mlmilk
Garlic pepper seasoning (or 3 tspn dry mix recipe in Condiments)
Instructions
Step 1
Chop parsley leaves coarsely & chop stems finely
Step 2
Grate parmesan finely (if block form)
Step 3
Slice chicken thinly.
Step 4
Stir stock cubes into 500ml (2 cups) boiling water to dissolve.
Step 5
Heat 2 tsp olive oil in a medium deep frypan on medium-high heat.
Step 6
Cook chicken, stirring, for 2-3 mins till browned.
Step 7
Add pasta, stock, pepper, garlic, salt, ginger, milk. Stir to mix. Cover & bring to the boil.
Step 8
Reduce heat to medium-low. Cook covered (stir occasionally) for 14 mins or till pasta is al dente.
Step 9
Add parmesan & half the parsley. Stir in well.
Step 10
Increase heat to medium-high & cook uncovered for 5-6 mins till sauce is thickened.
Step 11
Remove from heat. Taste, then season with more salt and pepper if desired.
Step 12
Serve in bowls sprinkled with eemaining parsley. Enjoy!
