1.5 lbsboneless skinless chicken breast
cut into bite-sized chunks
1 Tbspolive oil
½ tspsalt
½ tspblack pepper
½ tspsmoked paprika
¼ tspcayenne pepper

3 Tbspunsalted butter
3cloves garlic
minced
1 Tbspfresh parsley
chopped, optional
1.5 lbsbaby red potatoes
or gold, diced into small cubes
½ tspgarlic powder
¼ tsppaprika
½ cupplain greek yogurt
¼ cuplight cream cheese
¼ cuplow-fat milk
1 Tbspdijon mustard
¼ tsponion powder
¼ tspsalt
¼ tspblack pepper
1 tspparsley

Instructions
Step 1
Preheat the oven to 425°F (220°C) and roast the potatoes tossed with olive oil, salt, pepper, garlic powder, and paprika for 25-30 minutes, flipping halfway.
Step 2
In a large bowl, toss the chicken pieces with olive oil, salt, pepper, smoked paprika, and cayenne (if using).
Step 3
Heat a large skillet over medium-high heat and sear the seasoned chicken for 5-7 minutes until cooked through and slightly golden. Set aside.
Step 4
In the same skillet, lower the heat and add butter. Stir in minced garlic, cook until fragrant, then coat the chicken in garlic butter and sprinkle with parsley.
Step 5
In a small saucepan, combine Greek yogurt, cream cheese, milk, Dijon mustard, garlic powder, onion powder, salt, and pepper. Stir until smooth, then add parsley.
Step 6
Toss the roasted potatoes with the creamy sauce until well coated.
Step 7
Divide the creamy potatoes and garlic butter chicken into four containers, garnish with parsley.
