East Asian Fruit Salad

Ingredients

1Mango
diced into bite-sized pieces
1Pineapple
diced into bite-sized pieces
2Apples
diced into bite-sized pieces
2Pears
dicedinto bite-sized pieces
English Cucumber
seeds removed, diced into bite-sized pieces
1 TTamarind paste
Line juice
chili
finely diced dislodge seeds by rolling chili between hands, Use only 1/2 of the seeds into the dressing
2 TDark Brown Sugar
Peanuts
toasted and crushed
salt
Instructions
Step 1
Lightly salt peanuts and then toast, to release peanut smells. Crush and set aside.
Step 2
Whisk together the tamarind paste, chopped chili, palm sugar, and lime juice/zest in a bowl.
Step 3
Chop the pineapple, mango, cucumber, and apple/pear into bite-sized pieces. Tip: Save the apple and pear for last to prevent browning.
Step 4
Combine all fruits and cucumber in a large bowl.
Step 5
Pour the dressing over the fruit, stirring until all pieces are thoroughly coated.
Step 6
Garnish with toasted peanuts and serve immediately.
