Instructions

Step 1
​Sear & Sauté: Heat 1.5 tsp oil. Brown the chicken for 1 minute (remove). Sauté onions/garlic in the same pan for 3 minutes.
Step 2
​Deglaze: Pour 1.5 Tbsp of the broth into the hot pan. Scrape up the bits and turn off the heat.
Step 3
​Layer: Place potatoes in a small crockpot. Layer chicken, onions, and broth on top. Sprinkle with ½ cup cheese and half the bacon.
Step 4
​The Pour: Whisk together the sour cream, milk, remaining 2 Tbsp broth, salt, and pepper. Pour over everything.
Step 5
​Cook: Cover and cook on Low for 4–5 hours (or High for 2.5–3).
Step 6
​Finish: 15 minutes before eating, top with the rest of the cheese and bacon until melted.
