Step 1
Make the dough. Whisk together the almond flour, cocoa powder and salt. Mix in the syrup, coconut oil and mint extract until combined and a rough dough forms. Shape the dough into a disc and cover in plastic wrap. Chill in the fridge for at least 1 hour to overnight.
Step 2
After chilling, preheat the oven to 350F. Roll out the dough between two pieces of parchment paper to 1/4 inch thick. Cut out circles with a 1 1/2 to 2 inch diameter. You should get about 12-15 cookies.
Step 3
Bake for 9-11 minutes until firm. Do not overbake as they burn easily, it's difficult to tell if they're overbaked due to the color. Let cool completely.
Step 4
Melt the chocolate and coconut oil in the microwave in 20 second increments, stirring in between. Stir in the mint extract.
Step 5
Drop the cookies in the chocolate covering both sides, shake off excess and place back on the baking sheet. Top with sea salt if desired.
Step 6
Refrigerate for 10 minutes until the chocolate hardens and enjoy!
