Instructions
Step 1
Preheat oven to 200ºC (400ºF).
Step 2
Toss broccoli and cauliflower with olive oil, salt, pepper, and cumin if using. Spread on a baking tray.
Step 3
Roast for 20–25 minutes, flipping halfway through, until golden and tender.
Step 4
Meanwhile, whisk together tahini, lemon juice, water, salt, and maple syrup (if using) until smooth. Add more water for a thinner consistency.
Step 5
Serve the roasted veggies warm, drizzled with the lemon-tahini sauce.
