Instructions

Step 1
In a small saucepan, simmer ginger slices and lime zest in the filtered water for about 10 minutes.
Step 2
Remove from heat, strain, and let cool completely.
Step 3
Stir in lime juice and honey or maple syrup if using.
Step 4
Pour the ginger-lime base into two glasses with ice, then top each with sparkling water.
Step 5
Garnish with lime slices or mint and enjoy immediately.
