Sourdough Bread in Mixer
Makes 2- LG or 3 MED, or 4 SM loafs.
Bake using steam Bake 20 minutes at 475°F 3. Reduce temperature to 450°F (232°C). Bake 15–20 more minutes until deep golden brown. Inner temp 205-210

Instructions
Step 1
1. Mix water + starter + flour → rest 20–30 min.

2. Add salt.
Step 3
3. Mixer 30–60 sec every 20 min × 4 rounds.
Step 4
4. Let dough bulk ferment at room temp until ~50% risen (usually 3–5 hrs depending on temp).
Step 5
5. Shape dough.
Step 6
6. Place in banneton, cover.
Step 7
7. Refrigerate 12–24 hrs.
Step 8
8. Score cold dough.
Step 9
9. Bake covered 20 min, uncovered until done.
