Chicken
600gboneless skinless chicken thighs
1 TbspCajun seasoning
1 tspsmoked paprika
1 tsponion granules
1 tspgarlic granules
1 tspdried oregano
1 Tbspextra virgin olive oil
Cajun Lime Sauce
shallot
finely
1 tspsmoked paprika
1 tspCajun seasoning
200mlchicken stock
150mlsingle cream
100gcherry tomatoes
1lime
halved

Instructions
Step 1
1. Season the chicken
Pat chicken thighs dry. Coat evenly with Cajun seasoning, smoked paprika, onion granules, garlic granules, and oregano.
Step 2
2. Sear the chicken
Heat olive oil in a large pan over medium-high heat. Sear chicken for 4 to 5 minutes per side until browned. Remove and set aside.
Step 3
3. Cook the vegetables
In the same pan, add shallot and red pepper. Cook for 3 to 4 minutes until softened. Add garlic and cook for 30 seconds.

4. Make the sauce
Add smoked paprika, Cajun seasoning, chicken stock, and cherry tomatoes. Stir and simmer for 2 minutes. Add cream and stir to combine.
Step 5
5. Simmer the chicken
Return chicken to the pan. Spoon sauce over chicken. Squeeze juice from half the lime into the sauce and add lime halves to the pan. Cover and simmer for 15 to 20 minutes until chicken is fully cooked and tender.

6. Serve
Serve hot with rice or vegetables. Spoon the creamy Cajun lime sauce over the chicken.
