Instructions

Step 1
Finely mince the white part of a lemongrass stalk and combine with paprika, cayenne pepper, garlic powder, onion powder, salt, and black pepper.

Cut steak into 1-inch chunks.
Step 3
Evenly coat the steak cubes with the dry seasoning.
Step 4
Finely cut chives, white part of a scallion, and mince garlic.
Step 5
In a heavy-bottom pan over medium-high heat, sear the steak until it reaches your desired doneness. Turn down the heat and add a knob of butter, scallion whites, and garlic. Baste the steak cubes in the butter and add a splash of fish sauce. Turn the heat off and add chives.(Optional) add some vegetables in the pan so soak up the residual butter.
Step 6
Top over some rice. Garnish with a lime wedge and lime zest.
