Instructions
Step 1
Cut your fillet down to size, and score the skin lengthwise to prevent curling. Season with salt, pepper, and Cajun seasoning on all sides, mopping up as much of the spices as possible with all the sides of the fillet. Let the filets come up to room temperature for a little before cooking.
Step 2
Heat a pan over medium-high heat, and add a glug of oil. Don't add oil until the pan is heated to prevent oil from burning. Drop in the salmon fillet, and press down on the top for about 15 seconds to keep the skin from curling. Let cook for about 5 minutes, or until cooked half-way through.
Step 3
Flip salmon to other side and let cook for another 3 minutes or so, or until mostly cooked through. Drop in the lightly crushed garlic cloves, thyme, and butter. Flip fish back skin-side down, and place on a back burner over low heat. Baste butter over top a few times, then stack garlic an herbs on top of the filet. Let rest on low for about 6-7 minutes. When plating, squeeze more lemon juice on top to finish.
For the Lemon Aioli

Mix ingredients together and serve on the side of the plate in a smear.
