For the Chicken
2 Tbspolive oil
1 tspsmoked paprika
1 tspgarlic powder
Salt
pepper

2Baby Gem lettuces
For the Salad, roughly chopped
250gcherry tomatoes
1avocado
0.5red onion
4 Tbspfresh parsley
chopped
4 Tbsptahini
For the Dressing
Juice
2lemons
1garlic clove
4 Tbspwater
Salt

4 Tbspsauerkraut
Optional, or kimchi

Instructions
Step 1
Marinate Chicken: In a bowl, toss the chicken breasts with olive oil, smoked paprika, garlic powder, salt, and pepper.
Step 2
Make Dressing: In a small jug, whisk together tahini, lemon juice, and crushed garlic. Gradually whisk in cold water until you have a smooth, pourable dressing. Season with salt.
Step 3
Cook Chicken: Heat a griddle pan or frying pan over medium-high heat. Cook the chicken for 6-8 minutes per side, until cooked through and golden. Rest for 5 minutes, then slice.
Step 4
Assemble: Divide the lettuce, tomatoes, avocado, and red onion between bowls. Top with sliced chicken, a sprinkle of parsley, and a generous drizzle of the lemon-tahini dressing. Add a spoonful of sauerkraut if desired.
