For The Salad

For The Chicken Marinade and Dressing

Instructions
Step 1
Whisk together all of the marinade/dressing ingredients. Pour out half of the marinade into a mixing bowl. Refrigerate the remaining marinade to use as the dressing later.
Step 2
Dice the chicken and add it to the marinade in the mixing bowl. Marinate the chicken for 15-30 minutes.
Step 3
While waiting for the chicken, prepare all of the salad ingredients and mix in a large salad bowl.
Step 4
Once chicken is ready, heat 1 tbsp of olive oil in a medium pan on the stove. Add the chicken and grill it on both sides until browned and completely cooked through.
Step 5
Allow chicken to rest for 5 minutes. Drizzle salad with the remaining untouched dressing. Top with a little bit of lemon juice or serve with lemon wedge. Sprinkle feta cheese.
