Step 1
oven to 180 C (355 F)
Step 2
Make caramel: cook water and sugar together until caramel is a deep golden brown but be careful not to burn. Pour caramel into flan dish, 8" cake pan or any straight sided 8" to 8"1/2 oven proof round dish and tilt dish so caramel coats bottom and sides.
Step 3
Bring milk to a boil.
Step 4
Beat eggs, sugar and vanilla together then pour hot milk on top while stirring briskly, add milk a little bit at a time at first as if you added it all at once the eggs might curdle. Transfer this mixture into coated flan dish.
Step 5
Cook in Bain Marie for 30mns. Test center of flan with thin knife blade (or toothpick) to make sure it’s done.
Step 6
Cool 15/20 mns and invert on serving platter: place serving dish on top of cake pan, hold tightly together and quickly flip!
Step 7
Right before serving you may garnish with dollops of whipped cream in which you can nest a few berries.
