Step 1
Preheat oven to 350°F (175°C). Line a muffin tin with paper liners. In a large bowl, mash the banana until completely smooth. Add Greek yogurt, egg, honey, and vanilla. Mix until creamy and well combined. Stir in oat flour, cinnamon, baking powder, and salt. Mix just until incorporated — do not overmix. In a small bowl, combine Greek yogurt, honey, and cinnamon for the swirl filling. Spoon a small layer of batter into each muffin cup (about 1 tablespoon). Add about 1 teaspoon of the creamy filling in the center. Cover with more batter until cups are about 3/4 full. Using a toothpick, gently swirl the top slightly to create a cinnamon roll pattern. Bake 15–18 minutes, until tops are set and centers remain soft. Let cool 5–10 minutes before serving. The centers stay tender and slightly creamy for that cinnamon-roll effect.
