Step 1
Oven 180°c
Step 2
Ensure the grated and chopped apples are coated in lemon juice to prevent browning.
Step 3
Cream butter and sugar or stir sugar in to the oil.
Step 4
Beat eggs.
Step 5
Sieve flour, baking powder and cinnamon.
Step 6
Add a small quantity of eggs to the buuter mixture then fold in a small quantity of flour, repeating until everything is incorporated.
Step 7
Add raisins and walnuts if using. (Can soak raisins in rum for a twist).
Step 8
Add chopped and grated apples. Stir well.
Step 9
Pour in to a lined 2 pint loaf tin.
Step 10
Bake for approximately 60 minutes or until a skewer comes out clean.
Step 11
Leave to cool completely in the tin.
