Tim's DIY Bullion / Broth - No MSG

6 steps
Prep:5min
If you want a powder that is 100% safe, tastes amazing, and costs pennies, you can pulse this in a blender and keep it in a jar for 6 months. It has that "chicken" flavor without the chicken

Instructions

Step 1
Pulse for Texture: Nutritional yeast usually comes in large flakes. To make it behave like a bouillon powder, put all the ingredients into a blender, spice grinder, or small food processor. Pulse for 10–15 seconds until it becomes a fine, uniform powder.
Step 2
The "Sift" Test: If you don't have a blender, you can just whisk them together in a bowl, but the flavor won't distribute as evenly in your water.
Step 3
Storage: Transfer the powder to an airtight glass jar (like an old spice jar or a small Mason jar). Keep it in a dark pantry; the turmeric can fade if left in direct sunlight.
Step 4
How to use it: To make "Broth": Stir 1 tablespoon of powder into 1 cup (8 oz) of boiling water.
Step 5
As a Seasoning: Sprinkle it directly onto roasted vegetables, popcorn, or into a pot of rice water before cooking.
Step 6
The "Acid" Trick: Because this recipe has no MSG or high salt, the flavor might feel "round" but not "sharp." If your soup tastes a little flat, add a tiny squeeze of lemon juice or a drop of apple cider vinegar to your bowl. The acid acts as a natural flavor highlighter!
