Instructions
Step 1

Prepare the Eggs: Hard-boil a carton of eggs, cool them in an ice bath, and peel them.

Grate the Eggs: Separate the cooked egg whites from the yolks and push each through a fine-mesh strainer to create a light, fluffy texture.

Prep the Garnishes: Finely mince fresh chives and slice a lemon into wedges.

Select the Base: Open a bag of kettle-cooked potato chips to use as the edible "spoon" for the toppings.

Assemble the Toppings: * Place a small dollop of creme fraiche onto a single chip.
Add a generous spoonful of caviar next to the cream.
Top with a pinch of the grated egg white and egg yolk.
Garnish with the minced chives.
