Instructions

Step 1
Heat half the butter in frying pan, add mushrooms until just wilted. Remove from pan
Step 2
With remaining gently fry onions without colouring
Step 3
Add arborio rice and cook until rice is coated in butter
Step 4
Add wine and cook until absorbed
Step 5
Add approx 100ml stock and stir until absorbed. Keep adding until used up
Step 6
Add mushrooms back to pan along with grated cheese, herbs and season to taste
Step 7
Stir in cream (optional)
Step 8
Serve with parmesan shavings
