Garlic Butter Chicken & Creamy Potatoes

Instructions

Step 1
Slice the chicken breasts into cubes. In a bowl, season them with salt, parsley, chilli flakes, garlic & onion powder, paprika, and olive oil. Mix thoroughly until the color deepens and all cubes are well coated.
Step 2
Wash and dice the potatoes into small, even cubes. In another bowl, season them with the same spices and a light drizzle of olive oil. Toss until every piece is evenly coated
Step 3
Place the seasoned potatoes on a lined sheet pan (use baking paper) and bake or air fry at 200°C/400°F for 20–22 minutes until golden and crispy
Step 4
Meanwhile, heat a pan over medium-high heat and melt 10g of butter. Add half of the marinated chicken in a single layer and cook for 3–4 minutes per side until a golden brown crust forms
Step 5
Once cooked, lower the heat and add 5g extra butter, minced garlic, and parsley. Stir until each piece is evenly coated in the rich, garlic butter, then transfer to a plate. Repeat this process for the remaining chicken
Step 6
Back to the pan on low heat, add evaporated milk with garlic & herb cream cheese. Stir until the cheese melts and the sauce thickens slightly for about 5 minutes. Add the crispy potatoes in the sauce, gently mix until well combined and creamy
Step 7
Finally serve and distribute into equal servings with the delicious chicken and your high protein meals are ready for the week, ENJOY!

Important Cooking Notes

Step 8
Cook chicken on medium-high heat for 3–4 minutes per side until golden brown. Avoid overcrowding.
Step 9
Lower heat before adding butter, garlic, and parsley. Stir for 1 minute to coat evenly.
Step 10
Keep pan on low heat when adding milk and cream cheese.
Step 11
Stir continuously for 5 minutes until slightly thickened, then add cooked potatoes.
Step 12
Reheat in a pan on low for 4–5 minutes or microwave for 5 minutes
