Instructions
Step 1
Boil potatoes in salted water 10-15 minutes.

Place them into a muffin pan tin, smash with spoon, drizzle with oil and season with salt, pepper, and garlic powder.

Bake at 425 for 12-15 minutes until crispy.

Blend eggs, egg whites, cottage cheese and seasonings until smooth.

Stir in diced bell peppers, bacon, and mozzarella.
Step 6
Pour the mixture over potatoes.

Sprinkle Italian seasoning over egg mix mixture.
Step 8
Bake at 425 for 20 minutes until fluffy and cooked.
