Toaster Oven Meatloaf

Instructions

Step 1
Heat 2 tablespoons of butter in a small saucepan over medium heat.

Add 1 tablespoon of olive oil (you can use vegetable or other cooking oil) The reason I’m going to use two different fats here while I’m cooking off my vegetables is so that we have a nice rich flavor from the butter and we have the volume from the oil that we need to actually cook them through

Add 3 to 5 cloves of garlic depending on how strong you want the flavor – should be diced up without the skin.

Add 1/3 to 1/2 of an diced onion

Let the garlic and onion simmer and sweat to get all that great flavor

Add one teaspoon of salt to the garlic and onion to help with the sweating.

Cook until softened and translucent, about 5 minutes. Remove from heat and let cool slightly.

Making a Panade – Aka bread and milk mix

In a bowl, add 4-5 tablespoons of any style bread crumbs.

Then add 4-5 tablespoons of milk.

Mix it well and let sit to absorb the liquid it takes about 10 minutes

Making the Meatloaves

In a separate bowl add your ground beef.

Seasoning your Meat Mixture.

Add 2-3 teaspoons of salt.

Add 1-2 tablespoons of Worcestershire Sauce.

Add the cooled garlic and onion mix.

Add an egg.

Add the parade mixture.

Mix with a fork so you don't overmix.

Forming the Meatloaves

Divide the mixture into 2 equal portions.

Gently form each portion into a loaf shape, you don’t want a hard-packed snow ball situation.

Place on a baking sheet/pan lined with aluminum foil – make sure you use cooking spray or butter/oil to grease your foil.

Baking the Meatloaves in the Toaster Oven

Bake in a preheated toaster oven at 350°F (175°C) for 25-30 minutes, or until cooked through. If you used more than 400 grams and your meatloaf are thick you will need to cook them at a lower temperature for longer.

To Caramelize Increase the toaster oven temperature to 400°F (200°C) and bake for an additional 5-10 minutes, or until the sauce is nicely caramelized.
Step 24
Remove from the oven and let the meatloaves rest for 10-15 minutes before slicing and serving.
