Ingredients
4 servings
3 Tbspvegetable oil
1yellow onion
diced
1jalapeño
1/4 reserved for green sauce, the rest diced
1 Tbspginger
minced
4cloves garlic
minced
3 tspground coriander
⅓ cupgreek yogurt
1 poundground beef
or lamb, preferably 80% lean, 20% fat
1 ¼ tspsalt
½ cupbeef broth
½ cupfrozen peas

Instructions
Step 1
Heat oil in a large skillet over medium heat. Cook onion and jalapeño until softened, 5-7 minutes. Add ginger and garlic and cook until fragrant, 1-2 minutes. Sprinkle in the coriander and let it cook out for 2-3 minutes.
Step 2
Add the greek yogurt, turn the heat to high, and cook for 1-2 minutes. It will separate but that is what you want. Reduce the heat back to medium, break up the ground beef in the skillet and let it cook through.
Step 3
While beef is cooking, make the green paste. Add all ingredients to a food processor and blend until it forms a paste.
Step 4
Add salt, green paste, beef broth and peas to the skillet. Cover and let it simmer over low heat for 15 minutes, stirring occasionally.
Step 5
Butter the buns and toast in a separate skillet. Serve with red onions, cilantro and lime wedges.
