Step 1
Have 1 defrosted hen.
Step 2
Stick a knife through the breastbone and cut through the front of the hen so you can pull the chest apart.
Step 3
If the hen has its innards, remove them. If not, put the hen in a big pot.
Step 4

Crush the garlic (or mince it) and put it inside the hen.
Cut up the vegetables in bite-sized chunks. Put the vegetables inside and around the hen.
Do the same with the bay leaves.
Step 5
Pour in the water and try to cover the hen. If you cant you will need to turn the hen every hour or so when its cooking.
Step 6

Cook for at least 4 hours or until the meat falls off the bone. You can see in this picture that the bone of the wing is visible without me even cutting into it.
At this point the hen is done, and the water has turned into broth. You can use the bone for cooking, art, or (if you have a garden) crush it into powder and mix it into the soil.
