1. Preheat oven to 375F

2. Put chicken on a large baking sheet and sprinkle with half each of Rosemary, oregano, salt, and pepper. Toss together potatoes, garlic, and remaining spices, and oil in a bowl. Scatter potatoes around chicken.

3. Bake, uncovered, in upper third of oven until potatoes are tender and crisp and chicken is cooked through, 1- 1.25 hours [if you sub in bone-in, skin-on chicken breasts for thighs, add them to the pan after potatoes have roasted 30 min]
