Chocolate Covered Marzipan

Marzipan, or almond paste, is a sweet dough made of almond flour and sugar that serves as the basis for Amaretti Cookies and Rainbow Cookies. Or, you can cut it up into pieces, coat it in chocolate, and have a very simple candy recipe. Vic is a big fan of marzipan chocolate candies, so I'm making a homemade version for her today for Easter!

Instructions
Step 1
Line a cookie sheet with parchment paper, and place a wire rack on top
Step 2

Cut your marzipan into 40 pieces, about 10 g each. Add to the wire rack
Step 3

Add chocolate chips and coconut oil to a medium bowl. Microwave in 20 second intervals, stirring in between with a silicone spatula, until you have a smooth melted chocolate
Step 4

Using 2 forks, dip the marzipan in the chocolate. Transfer to the wire rack so the excess chocolate drips off
Step 5

Chill for 30 minutes to harden. Store in the fridge
Step 6
If you prefer, you can make your own marzipan. Blend together 1 1/2 cup (168 g) almond flour and 3/4 cup (150 g) granulated sugar until combined. Add in 1 tbsp (15 g) almond extract, and 1/4 cup (60 g) water to form your marzipan dough
