Instructions
Step 1
Grease 2 oven trays; then line with baking paper. Beat butter, sugar and yolks in a medium bowl with an electric mixer until pale and fluffy. Stir in combined sifted flours, baking powder, then vanilla essence. Turn dough onto a floured surface; knead until smooth. Roll out dough between 2 sheets of baking paper, until about 5mm thick. Place on a tray; refrigerate for about 30 minutes, or until firm.
Step 2
Using a 13.5cm Christmas Tree Cutter, cut trees from dough. Re-roll dough to make 12 trees. Place trees about 3cm apart on greased oven trays. Using similar cutters cut out decorations from the trees' centres (see pic).
Step 3
Separate lollies into groups of the same colour Place each colour into a small snaplock or freezer bag; finely crush lollies using a rolling pin.
Step 4
Cook trees on the lower shelf of a moderate oven for 5 minutes. Then fill the cut-outs of each cookie with different coloured lollies. Cook for a further 5 minutes, or until lollies have melted and cookies are lightly browned. Stand on trays for 5 minutes. Transfer to a wire rack and allow to cool.
