Todd's Chocolate Brownies

Rich, fudgy chocolate brownies made with melted dark chocolate and butter, folded into whipped eggs and sugar, then baked until puffed and shiny. Optional nuts or extra chocolate chunks.

Instructions

Step 1
Melt butter and dark chocolate together gently on the stove and mix together and let cool to room temperature.
Step 2
Using the middle shelf of the oven and preheat the oven to 180°C / 160°C fan / gas 4.
Step 3
Line the base of a shallow 20cm square tin (ceramic), cut out a square of kitchen foil or non-stick baking parchment to line the tin.
Step 4
Sieve flour (almonds) and cocoa powder into a medium bowl to get rid of any lumps.
Step 5
Chop white and milk chocolate / walnuts into chunks.
Step 6
Mix eggs and sugar with a mixer on maximum speed until thick and creamy, or do the eggs and sugar a whip in a good food processor if possible - you want a silky texture you'll get after 4-6 min.
Step 7
Gently fold the chocolate mix into the egg mix with a spatula, making a figure 8 motion and avoid knocking the air out of it. Then stir the vanilla extract and rum / flavourful liquor in as well.
Step 8
Using a sieve, coax the egg mixture with the flour mix and gently fold the flour into the eggs, continue until it looks gooey and fudgy.
Step 9
Stir in the chocolate chunks or walnut chunks softly and evenly.
Step 10
Pour into the prepared dish and spread out evenly.
Step 11
Bake in the oven for about 35 min; when the time goes off shake the tin gently—if it wobbles at all in the middle then bake it for another 5 min until top is puffed and shiny.
Step 12
Cool, then cut into 16 squares / 32 triangles.
